  • 1 teaspoon vanilla extract (divided)
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 12 egg yolks
  • 1 1/2 cups sugar
  • 1 3/4 cups light rum
  • 1 cup VSOP brandy
  • 4 cups milk
  • 4 cups light cream
  • Additional 2 teaspoons vanilla extract

Instructions to make Stacia’s Classic Holiday Eggnog Recipe

1. Prepare Ingredients

  • Allow the milk to sit out at room temperature for 30 minutes before cooking to ensure it reaches the right temperature without scalding.

2. Infuse the Milk

  • Next, in a medium saucepan, combine the milk, cloves, 1 teaspoon of vanilla extract, and cinnamon. Heat over a low setting for 5 minutes, then gradually bring the mixture to a very gentle boil. Don’t scald the milk, so make sure to stir occasionally.

3. Combine Yolks and Sugar

  • In a large bowl, whisk together the egg yolks and sugar until the mixture becomes fluffy and starts to peak just a little.

4. Mix and Heat

  • Gradually whisk the hot milk mixture into the egg mixture, whisky constantly to avoid the eggs from cooking. It can be helpful to have a second person to whisk the mixture for this step.
  • Return the entire combined mixture to the saucepan. Cook over medium low heat, stirring constantly for about 3 minutes. Be careful not to let the mixture boil, as it will curdle if it becomes too hot.

5. Remove Cloves and Cool

  • Remove the cloves from the mixture using a slotted spoon or strainer. Allow the mixture to cool undisturbed for about an hour.

6. Finally: Blend and Storage
