It was our friend Katie’s birthday yesterday and we were getting together for a little dinner. The instructions given to me were bring dessert. Well, you don’t have to tell me twice. So, I got right on it. I had been wanting to experiment with fondant icing for a little while because it always looks so pretty. So, I started getting crazy cake ideas in my head and then headed to the grocery store. I ended up with a wild concoction, but it was delicious. Double chocolate fudge cake from a box, with raspberry preserve filling and then buttercream icing (Wilton’s recipe) topped with fondant and of course polka dots made from a little red gel food coloring. Everyone keeps saying it looks like the cakes in Alice in Wonderland, which I didn’t see, but I’m flattered by. It’s really nothing, because fondant makes anything look good!
