I’m absolute obsessed with these patriotic ice cream sandwiches! This yummy dessert is the perfect homemade treat for you to make this summer!

If you know me, you know I have a serious obsession with ice cream sandwiches. Who doesn’t? These patriotic ice cream sandwiches take the cake! They are perfect for any celebration or summer get together. For this recipe, you should plan ahead because the ice cream sandwiches need to be served IMMEDIATELY or placed in the freezer until ready to eat.

Directions for preparing the cookie dough:

Preheat oven to 350 degrees.
Spread ANY cookie dough in a 13X9 pan. I used chocolate chip cookie dough but sugar cookie dough would be great too!
Bake the cookie dough for 16-18 minutes.
Remove the cookie bar from the oven when the edges are slightly browned and the center is set.

Next, cool the cookie for a few hours until the cookie bar is completely cool. Make sure not to rush this step, because if the bars are not set they will fall apart during assembly. I cooled mine over night, but a few hours should do the trick.

Assembling your patriotic ice cream sandwiches:

First, cut the cookie cake in half and then into squares. You will cut the other half of the cookie bar once the bars are put together.
Next, using a mini star cookie cutter, punch a star in the center of each of the pre-cut squares. This step is optional, but is a really cute touch.


Now, grab your favorite ice cream from the freezer and set it out at room temperature until softened. It usually takes about 15 minutes to soften. Now it is time for you to spread the ice cream over the uncut side of the cookie bar as pictured above. Once you’ve covered the 2nd half of the cookie bar with ice cream, place the cut squares on top of the ice cream and cut all the way through to make your final squares.
Last, for some extra patriotic sparkle, dip the edges in red, white and blue sprinkles! These sprinkles were from Michaels.
If not eating immediately, refreeze until ready to serve!
